My Favorite Meatloaf

This is comfort food at it’s best. The combination of ground pork and ground beef make this meatloaf very flavorful and moist.

My Favorite Meatloaf

Sauce:

1 1/2 cups ketchup

2/3 cup brown sugar

2 teaspoons dry mustard

1 tablespoon Dijon

1 1/2 cups dried bread or cracker crumbs

1 pound ground beef

1 pound ground pork

1 cup (heaping) freshly grated Parmesan cheese

1 medium onion, diced (about 1 1/2 cups)

1 teaspoon salt

1 teaspoon black pepper

1 tablespoon Mediterranean Spice Mix, or any favorite Greek/Italian seasoning

1/3 cup minced parsley

3 eggs, beaten

Preheat oven to 350º.

Mix sauce ingredients together in a small bowl.

Place the crumbs, ground beef, ground pork, Parmesan, onions, salt, pepper, seasoning mix and parsley in a large mixing bowl. Pour in beaten eggs and half of the sauce mixture.

Using your hands, gently mix the ingredients until well combined, taking care not to overmix. Form the mixture into 10 small meat ball rounds on a foil lined sheet pan, that has been sprayed with cooking spray.  Make a small indention in the top of each loaf and coat with remaining sauce.

Bake for 25-30 minutes, or until internal temperature reaches 160º.
