Summer Fruit Crumble Ice Cream Bars

This is a lovely summer treat, great to prepare ahead, cut, wrap and store in the freezer to grab and hand out at your next summer party. Use any ice cream, home made or store bought, any fruit, any nut. Endless possibilities.

Ingredients
  

  • 2 cups flour
  • 1/2 cup oats the old fashioned kind
  • 1/8-1/4 teaspoon salt
  • 1 cup butter, unsalted cold and cut into cubes
  • 1 gallon ice cream, any flavor softened
  • 2 cups summer fruit chopped
  • 1 cup toasted nuts chopped

Method
 

  1. Preheat oven to 400º. Mix together the flour, oats, brown sugar and salt. Cut in butter until it resembles a coarse meal. Add nuts and toss to blend.
    Press into a 13 x 9 baking pan and bake for 15 minutes or until lightly browned. Cool thoroughly in the pan and then break up into a crumble. I like to leave some marble sized pieces as well as some smaller ones.
    In a bowl, mix the fruit into the ice cream. Spread out half of the crumble into the bottom of the 13 x 9 pan, pressing down evenly. Spread the ice cream over the crumble, taking care not to disturb that layer. Top with remaining half of the crumble, again, pressing evenly to adhere to the ice cream.
    Freeze until firm, about 2-4 hours or overnight. Let stand for about 10 minutes before cutting into bars. I cut mine into 24 2×2 bars which felt like the perfect size to me.
