Vinaigrette
- 1/4 cup lavender balsamic vinegar I love Con Olios
- 1/4 cup peach white balsamic vinegar ditto
- 1/2 teaspoon salt
- 2 tablespoons honey
- 2 tablespoons peach preserves
- 2 teaspoons Dijon
- 3 cloves garlic minced
- ½ teaspoon black pepper
- 1/2 cup good quality olive oil
Salad
- 6 ears fresh corn, kernels removed or 6 cups corn kernels
- 4 large peaches peeled, pitted and sliced, save that juice!
- 4 radishes thinly sliced
- 6 handfuls baby arugula
- 1 cup feta cheese crumbled
Place all ingredients for the vinaigrette, except the olive oil, in a quart jar or glass bowl. Whisk or shake to blend. Add olive oil and whisk or shake to emulsify. Place corn, peaches green onions and radishes in a large bowl and gently mix,. Place a handful of arugula on each plate and top with salad mix. Just before serving drizzle each serving with about a tablespoon of the vinaigrette then top with feta. You will have extra vinaigrette, yeah!
