Fresh Corn and Peach Salad with Honey Lavender Vinaigrette

Summertime means fresh peaches and corn and things that grow in season together typically go together in taste! Trust me on this one!

Ingredients
  

Vinaigrette
  • 1/4 cup lavender balsamic vinegar I love Con Olios
  • 1/4 cup peach white balsamic vinegar ditto
  • 1/2 teaspoon salt
  • 2 tablespoons honey
  • 2 tablespoons peach preserves
  • 2 teaspoons Dijon
  • 3 cloves garlic minced
  • ½ teaspoon black pepper
  • 1/2 cup good quality olive oil
Salad
  • 6 ears fresh corn, kernels removed or 6 cups corn kernels
  • 4 large peaches peeled, pitted and sliced, save that juice!
  • 4 radishes thinly sliced
  • 6 handfuls baby arugula
  • 1 cup feta cheese crumbled

Method
 

  1. Place all ingredients for the vinaigrette, except the olive oil, in a quart jar or glass bowl. Whisk or shake to blend. Add olive oil and whisk or shake to emulsify.
    Place corn, peaches green onions and radishes in a large bowl and gently mix,. Place a handful of arugula on each plate and top with salad mix. Just before serving drizzle each serving with about a tablespoon of the vinaigrette then top with feta. You will have extra vinaigrette, yeah!
