Boneless Pork Ribs
I typically cook pork ribs with the bone in, such as baby backs or spare ribs. HEB had a special on these Country Style Boneless Pork Ribs so I thought I'd give it a try. This is a very versatile recipe; change up the rub and try different bbq sauces. I usually make by own but I also usually have a jar in the fridge. (I'll post my favorite Peach BBQ Sauce soon) These came out very tender and flavorful with a lot of meat. I had leftovers so I'll be shredding them and putting them into a beef soup or posole.

Method
- Preheat oven to 500º. Place ribs in a shallow baking dish and rub in the spice rub. Pour the sauce over the ribs and cover tightly with foil. Cook for 10 minutes and then lower the heat to 325º. Cook for 45 minutes then turn the ribs, making sure each rib is nicely coated with sauce. Recover and cook for another 45 minutes. Check to make sure the ribs are tender and just starting to fall apart. Uncover and cook for another 15-20 minutes. (Internal temp 145º).
